What variation of flavor is there in mushrooms and how can I use this to my advantage in preparing various dishes?

Answer:
Definitely trying different types of mushrooms, but mushrooms are like sponges, right? That's why they say you're not supposed to wash them before you cook them because they'll just absorb all of the, um, the water. They'll also absorb all those spices, right? So you do some blooming of spices and then add your mushrooms to it and you can make mushrooms a bazillion ways depending on what spices you use there. So I actually purchased a new, um, recipe book. I'm just gonna grab it here from, I had never heard of her Teagan Gerard. And in here she uses a bunch of herbs and spices. Um, but she also uses a lot of saturated fat. But I, I'm an expert at, okay, I don't need that kind of fat and I don't need to add this to it. And so I know how to make her dishes into ones that are more healthful. Um, and she has this mushroom taco that looks incredible.
