Question:
Is vegetable broth one of the better substitutes for olive oil when sautéing veggies and scrambling eggs?
— MARK RAPPAPORT
Answer:
I think it certainly can be, you know, if you want to use, especially for the, the saute method, right? You want to use a liquid to deglaze the pan and loosen things up, then, um, a flavorful liquid. So if you're on a plant-based, uh, diet, then vegetable stock, right? Or vegetable broth, these are synonymous terms, um, uh, would be a fine ingredient to use. And, um, you know, keep in mind that it, it, it could be water, uh, if you don't want to impart any additional color or flavor. Um, so, you know, taste the vegetable broth on its own to see if, uh, those tastes and flavors, um, are what you want, you know, to emerge as one layer of flavor that you develop in the sauteed onions, for example.
