I watch my glucose and am looking for alternatives to white sugar. Are there recipes without sugar and just cooking apples?

Answer:

Absolutely Deb. So in your case you wanna choose sweeter apples. You can still choose a variety of them, but find out which apples are the sweeter apples and you really don't need sugar. I use a little bit of maple syrup here just a little, but to tell you the truth and, and then water. So it's almost like I made a sugar syrup with like, I would say it was about one to four, maple being the four and water being the one dried fruits which have a lot of fiber are going to sweeten that up.
