Question:

When preparing apple for a fruit tray, I place the slices into orange juice for 5 minutes to prevent browning. Is there a better way that will not compromise the nutritional value of the apple?

— Diane Dankert

Answer:

The apple slices in the orange juice, or as I said earlier, I tend to use apple juice that does not compromise the nutritional value of the apple. So I wouldn't worry about that. You can, anything that's going to have some acid in it like another fruit juice or a little dip in lemon water, they're going to preserve what's healthy about the apples and they're gonna keep them from turning brown.
