Question:

What are some spices beyond the typical cinnamon and nutmeg that you like to pair with apples?

— Melissa Bryant

Answer:

Well, yes, cinnamon and nutmeg are definitely typical and again, I wanna say caution people first of all make sure your spices are fresh because if they're not, you're not gonna get any flavor. And if you wanna know more about spices, I did a live event with Ori Zohar a few months ago and he's the co-founder of Burlap and Barrel and we learned so much about spices from him. You can go and have a look, but I like, um, a little tiny bit of clove sometime. I really love apples and ginger, a nice ginger powder. I like cardamom and I have been known to make some apple desserts with just a little bit of a kick. Now my friends know that I'm not a person that really likes spicy food. I have a pallet that doesn't love spicy food to put it mildly, but I've been adding two bits of, I will make a big batch of applesauce for example, or slice apples for a cobbler or a crisp pull some aside and see what happens if I macerate those apples with a little bit of ancho chili powder or some unusual spice like that. And it's actually really very tasty. You can also use or herbs like um, mint and thyme and rosemary for a different flavor.
