So yeah, I mean whipping um, an oil into a mayonnaise is quite the process and it takes either a lot of arm strength or a very good mixer. So I think that probably what's happening on that is you need to be able to whip it in more. Um, I've known people to add other kinds of things to olive oil to make sure that it's not gonna be too oily or it's not gonna break as well. But part of that I think is just practice on that. So, um, you know, keep that arm straight going, what I, I call risotto arm from spinning it over and over and over again. Um, you know, I think that's probably, that probably might be part of it, but, um, you know, I, I like that you're switching different oils to be able to see what consistency is working for you as well too. It's always a pro move to be able to do that. Um, but keep trying different things. It sounds like you're on the right path. Uh, just keep trying for, uh, a couple different methods.

Dan is a board member of Slow Food Austin, the Institute of Child Nutrition, and Conscious Capitalism. He has earned his BA in Journalism from the Walter Cronkite School of Journalism at Arizona State University and holds certificates in Nutrition from Cornell University. Prior to his role with Rouxbe, Dan worked with Whole Kids Foundation training teachers and food service at schools across the country on nutrition and culinary best practices. He also worked as a Healthy Eating Educator at Whole Foods Market’s flagship store in Austin, TX, was a personal chef for some of Austin’s elite business people, taught classes in culinary techniques at Austin Community College, The Natural Epicurean, and Le Cordon Bleu. Dan also regularly volunteers cooking or speaking about nutrition for the Michael & Susan Dell Foundation, Marathon Kids, Health Alliance for Austin Musicians, and the Ronald McDonald House Charities of Austin and Central Texas.
