Question:

I like to make biscotti which involves toasting almonds and anise seeds. Does it affect quality to batch roast a month’s worth of seeds and nuts?

Answer:
I would probably tell you, um, if I'm going to make a biscotti with those for the almonds and, and, and nice, I would do them kind of as you need them because you're also releasing some of the oils that are coming out of that. And that might lose a little bit if you're holding them for a month long. Um, you know, your first batch is gonna taste a little bit different than the, uh, the last batch. So, um, I would maybe do it, you know, maybe every two weeks depending on how often you're making your biska. But, uh, yeah, I would, I think a month is probably a little bit too long, you know, probably loose some of those essential oils that are coming off of, uh, those and, you know, which gonna really affect the flavor.
