Is xanthum gum a health risk?

Answer:

It's pretty if you're purchasing prepared foods and I think cosmetic, all kinds of things, it's really hard to not have xantham in your life. I use, when I use coconut milk, my milk of choice is Edward and sons and they have one called simple that doesn't have any, um, xantham in it. So I think for me, I don't worry about it too much because um, the, the amount I would be using is very small. But when there is a choice I don't use, you know, I leave the xantha out. That said, one of our students, a plant-based pro graduate and essential vegan desserts graduate had a particular health, um, issue. And she told me that all gums are particularly dangerous for this issue. And so I thought about it and I was using it in the vanilla pastry cream along with agar powder. What I did was I took the xantha out and I just used more of the agar powder and it worked great.
