Is there a way to make florentine cookies vegan?

Answer:
Florentine cookies are super easy to make vegan. Uh, a typical Florentine recipe will be a small amount of flour, sometimes just three tablespoons almond flour, let me think. Brown sugar honey. And they're very thin and very lacy and butter. So you can swap out the dairy butter for vegan butter. You wanna use a solid vegan butter. Never use a vegan spread when you're doing desserts. And it depends. Some many vegans won't use honey, some use local honey, you can swap out the honey with maybe rice syrup won't be quite as. Yeah, rice syrup, um, maple syrup, agave. We do a vegan honey in the course. That's delicious. But that said, we have a wonderful, I like Florentines and I wanted to see if I could develop a recipe for a very, very lacy Florentine like cookie without using sugar, granulated sugar. And so our florentines use a combination of rice syrup and maple syrup. Rice syrup has very particular properties if you bake, use it to bake a cake is gonna, the cake's gonna be gummy but it makes things crispy. And these cookies when done properly, it's actually an assignment in the course. They are super lacy and really nice. So good luck.
