I found a recipe for Eleven Madison Park Granola. It calls for 1/3 C EVOO, I use 1/2 that. Is there a substitute, or should I not be concerned? Yield 6C.

Listen, I can tell you whether or not whether to be concerned or not, but look at this, I got to go to 11 Madison Park for the most exquisite meals. So for those of you who don't know, this is Chef Daniel Hamm had a, a restaurant still has a restaurant called 11 Madison Park in New York City. He was very famous for his duck during the pandemic. He rethought food. He had a Michelin, he had three Michelin stars at the time. He went completely vegan. Their whole entire restaurant, everything that's served the drinks, everything is vegan and he still has three Michelin stars. So I went there for a treat and they sent everyone at my table home with this in this beautiful cloth bag and this bowl. And you can see that we've been munching on it. But this is their granola. It is delicious. But I will tell you that to me it tastes like dessert. I'm uh, I'm used to granola that is less sweet. So that's what I say. Um, in terms of your asking, is there a substitute or should you not be concerned? That's up to you. I'm not gonna tell you, uh, how much oil to have in your life. I mean, you don't eat that much granola, right? You just eat a little bit of granola. So if you like it the way it is, leave it that way. And if you want to make a half batch another time or a quarter batch and cut the oil back even more, go ahead and do that.
