Question:

Of the following vegan sugars available in my coop - organic cane, coconut, date - which should I buy for what?

Answer:
Organic cane is the closest to typical sugar that you find in the supermarket. So the, it's going to be the most neutral and we're closest to whatever recipe you're adapting. It is not as sweet a hundred percent as table what I call table sugar or supermarket sugar. It still has some of the molasses is retained so it's a not pure white or again, coconut sugar. You want to rough that up. Grind that because it's has a big crystal that I use that in place of brown sugar. 'cause to me it has that molasses seed taste and I use that. I wouldn't use coconut sugar in a vanilla cake, but I use it in a chocolate cake. I use it in chocolate pudding and so on date sugar I use for sprinkling, I find that date sugar. And you want to, you want to um, buy a super fine date sugar. It doesn't bake well and it tends to burn.
