Question:

When boiling soaked garbanzo beans, a white foam forms on top at first, should I skim the white foam that forms on top off, or mix it in with the rest of the water?

Answer:
The only thing that is in that water is protein and carbohydrates. After you drain the beans, you can use aquafaba that from fresh beans. And as Chef Fran had mentioned last week, you might want to cook it down a little bit. Um, I do use aquafaba from fresh, from fresh garbanzo, ob. There's a little bit of difference in texture, so I cook it down, down until it resembles what you see in canned. But yes, Diane, you could eat them, they'll add flavor. It's just protein and carbohydrates.
