Question:

When not cooking with oils, how do you stop food sticking to the pan? I’ve been using water.

Answer:

So, um, depending on what food you're cooking, um, you are probably going to have to de deglaze the pan a little bit to be able to get whatever it is to not stick to the pan. Um, now some foods will have natural oils or they'll have waters, um, that are in them that will kind of release out and help not stick them to the pan, but a lot of them have natural sugars that will make it stick to the pan. Now when that happens, just add about a tablespoon of water into it, it'll deglaze. You can get that brown off the bottom of the pan and get it to stick back to the product that you're doing as well too. So water is actually the perfect medium to be able to help get things not to stick to the pan when you're doing a saute.
