Question:

What can I substitute for oil when using a waffle maker or griddle for pancakes?

— Sue Baker

Answer:

When you go to a restaurant and they're making waffles, they're usually not spraying down the waffle maker with like a spray oil or something like that. They're usually just putting the batter right into the waffle maker, setting it and then forgetting it. Um, typically waffle makers will release basically when the product is cooked. So the mistake that most people make was that they will keep peeking at the waffle maker to make sure to see it and try to lift it up to see if it's stuck or not. Let it sit, set it and forget it. Um, you know, there's that old rule that if you're looking, you're not cooking. Um, right? So part of that is letting the waffle cook a little bit longer than you might think it needs to, and you'll see that actually helps release off a little bit better. Um, a lot of times that's because there's um, you know, like if you're using, uh, you know, a waffle maker or something like that too, you can also, um, do a little plant-based butter into that as well too. Um, but you know, if you're trying to get away from the oil, I think it's just best just to kinda set it and forget it as well too. Um, with the pancakes, you just have to keep a good eye on it. Once you start getting the bubbles that are kind of coming up through it, um, you know, you should be able to get a spatula underneath that pretty easily, depending on, uh, if you're using a stainless steel, it might be a little bit harder. Um, and just, you know, a little bit of liquid will go a long way with that. So, uh, I think that it's the best advice I can give you is to let it cook a little longer than you think it would and it should release a lot better.
