Question:

Is there a secret on how to avoid the crying session when chopping onions?
— Sheila Washington
Answer:
What's happening with the onions there is that onions are left in that are left in the ground for a bit longer. They little bit older will start releasing gases basically when you cut through the cells of them. So when they're cut open like that, those gases are basically floating up and they're going into your face as you're cutting above them. And that's actually what's making you cry. So there are a couple different tips. One is you might want to cut, uh, your onions near a fan. So one that's just going across that'll actually help keep the, um, you know, the uh, um, the gases from coming up and hitting you because the fan's blowing away. You can also do it under, you know, uh, a duct basically for underneath your stove as well too, to be able to help kind of get those as away as well. I've heard that you can also put the onion in a freezer for just like five minutes before you're going to cut it, help freeze some of those cell walls before cutting into 'em as well too. So those are just a couple of those things that I would recommend for that. Um, you know, I've heard people wearing like goggles and stuff when they're cutting, which is pretty silly as well, but it does keep the gases from going up into your eyes as well. But I think a fan is probably your simplest idea for that.
