Question:

What's the difference between black soy beans and black beans? Can the black beans and black soy beans be used interchangeably in recipes?
— Diane Dankert
Answer:
The difference is that when you cut through a black soybean, it is white in the middle, and when you cut through a black bean, you, they will be black. So that's the primary difference. They don't exactly taste the same. If you are, uh, on the assignment of, uh, the legume where you have to make the two dishes, it might be interesting to make a sweet and savory dish from the, um, black soybeans, but they taste different and they also cook differently. So that's sort of it in a nutshell.
