What is the culinary difference is between white and brown miso? Any tips on use of miso?

Answer:
There are many, many different colors of miso. Most of it has to do with its fermentation time. So I am somebody who really likes to use yellow miso, and I like it because it's fermented with barley and with, uh, soy, and it's probably the most popular. Uh, there is red, um, which is, excuse me, soybeans. And then it might have a variety of different greens in it. That's why it's really important when you are buying miso to make sure that it is gluten-free, because some of them will use, for example, barley, which is not gluten-free.
