Question:

Should we be using "hulled" or "unhulled" sesame seeds? Not sure what the difference is in the kitchen.

— Mitch Miglis

Answer:

These are hold, uh, the black sesame seeds are more expensive than the white ones. I don't know the reasoning behind that. So, uh, and, uh, we discussed this earlier a couple of minutes ago, but just back to sesame seeds. Um, the white ones that you see here are more or less used for sweet dishes. The black for savory used in a lot of Japanese cuisine. I always suggest to toast them. You can keep them on hand in the fridge. They make a really nice garnish and they add so much flavor to any dish that you're making. Uh, for those of you who are in, uh, plant Pro, the, um, Yaki Udon, uh, which is my favorite recipe, uh, you can garnish that with sliced green onions and maybe some Julianne carrots, but a, uh, dusting of some sesame seeds always gives it a really nice appearance.
