Question:

Should I add brine solution to the apple and cabbage kraut if it’s getting dry? And how long does that last in the fridge?

Answer:
If your crout is sticking above the line of the liquid, the brine solution, um, that's not great. So typically you wanna try to put a weight on top of the kraut. Um, you make little glass ones or stone ones that you can put on top of it to be able to make sure that it weighs down before, uh, inside the liquid of the Kraut. Um, so if you, uh, have to add more brine solution, definitely do that, but you want to make sure that it is covered. So it is actually, um, safe to be able to eat. Um, how long has it last in the fridge? A long time. Most sauerkrauts can last, um, a very long time in the refrigerator 'cause it's a fermented food. Um, you refrigerating it slows that fermentation down dramatically as well too. So they usually last quite a long time in the fridge. Um, you know, I would say I've had a crowd in the fridge for at least six months before and it was just fine as well, which is gonna get funkier and funkier tasting. Just to give you heads up on that.
