Question:

The FOK cooking class has a recipe for Pho Stock, which includes 4 star anise, a tsp of whole cloves, a stick of cinnamon. If I double the recipe, do I also double these ingredients?

Answer:

So, um, a lot of times for spices, especially ones that are so strong like star anise and cloves and cinnamon, um, if you double the amount of, uh, ingredients, um, in it, uh, it's going to taste a little off. And I would agree with this one, the fa um, so I wouldn't put as much in there. Um, I would probably start with, uh, the four and the teaspoon of clove and the stick of cinnamon, double a recipe and then be tasting it as you go. And if you, if it tastes like it needs a little bit more, I would add more and I would probably guess you might end up around, you know, five to six star anise, um, and then maybe a teaspoon to a teaspoon and a half of whole cloves and then one stick a cinnamon probably will keep it going just fine as well too. So it's gonna take a little bit of experimentation to get it perfectly right, but I would start with the base, um, double all your other ingredients. But as far as those four, I would just keep it as what they are and then taste to be able to get the flavor profile you're looking for.
