What should I do with the vegetables used for the stock?

Answer:

Yes, you are right on that Diane, but by and large they have lost most of their nutrients and most of their flavor. So you absolutely can do something if you want to. Um, usually I go, I put them in the compost to tell you the truth after that because you're not getting the full flavor out of them. It's all put into the stock. That's why you're using 'em in that method as well too. Um, but go ahead, if you wanna add 'em into something else, I've known other students to be able to like puree them in a blender or something and make them into a sauce. All those things can be done. Um, just remember they're not gonna have as big a flavor as, uh, you know, you would if you just use those ingredients to start. If you just like steam them and put them in a blender, it's gonna be a much bigger flavor out of those. So yeah, primarily when I'm done making a stocker soup, um, I'm going to, uh, compost the vegetables afterward as well. But if you wanna do something else with them, you're more than welcome to.
