Question:

So once the liquid from a can of chickpeas is drained, how long can I store it in the refrigerator? How long in the freezer? Does freezing it cause it to loose its egg-like properties?

— Diane Dankert

Answer:

I don't keep it in my fridge for more than two days and I keep it in my freezer. I think for months very well protected. But I always, I always reduce the aquafaba first and then either refrigerate it or freeze it instead of defrosting it and then reducing it. Then it's just good to go. This has been reduced already.
