Question:

I’ve been steaming my vegetables a lot lately to minimize using oil and best retain the nutrients, and was wondering for more flavor if I can add herbs while they’re steaming, or should I wait till afterwards?

— Mark Rappaport

Answer:

No, you need to add the herbs after, or they're just gonna, they're gonna melt, they're, and they're gonna lose their flavor and they're gonna lose their phytonutrients with the high heat and the steam. So you want to, you know, cut it up. You wanna put the carrots on the, or let's just say carrots, whatever steam vegetable you use, and then you wanna sprinkle that on the top at the very end so that it maximizes flavor and maximizes the nutrients.
