Question:

Can you talk about alternatives to cashews in the cashew béchamel?

Answer:
So I do make this with white beans and it comes out perfectly and very, very well. So my suggestion is you can do a couple of things and I know that you are a follower of, uh, Dr. Caldwell b Esselstyn and that you have read, prevent, and reverse heart disease, and hopefully you have a couple of other of the, uh, books that people are using. So my suggestion, or I think I gave you three suggestions last night, one is that you can use a low sodium tamari, which Anne Essel always recommends, and she recommends the tamari because it is gluten-free, aside from, in this case being low sodium. Then the next thing I would recommend is to add some, uh, some miso, either miso paste or miso powder to enhance the umami a little bit. And, uh, of course you might wanna throw in a little extra nutritional yeast. And I always say garlic makes everything better. So I forget exactly the amount of garlic that's in the recipe, but the onion and garlic composition would certainly add the flavor sometimes to help the texture a little bit. I'll throw in, uh, a tablespoon or two of hummus and that seems to add more flavor and help to the consistency as well. So Charles, I hope that you find that helpful and I think you're gonna really like the taste and flavor of the, uh, non cashew based special meal. So good luck with your recipe and keep us posted.
