Question:

Are there benefits to getting a lid for a stainless steel pan?

— Mark Rappaport

Answer:

Yeah, actually having a lid for a saute pan is a wonderful, uh, additional tool to be able to have. Um, a lot of times you'll find sets of different cookware, um, you know, that will come with a lid that will kind of fit different ones because it is kind of, you know, if you have a lot of different lids and they only fit one pan, sometimes it's kind of a pan just for storage reasons. So sometimes it's really good to be able to get, um, the set so you can get a pan lid that'll have fit a bunch of different things and you can use it, um, you know, needly, but or as you need. Um, but again, on the sauteing, um, if you're looking for a saw tape in having a, uh, a lid on it is fantastic, especially when cooking for vegetables, because by doing that, you're able to trap some of the heat in the inside and, um, it's kind of like an oven, right? A closed space, but closing that space in will actually help kind of take any of the moisture and lock that into the food that you're cooking. So if you're steaming some, or if you're doing like a, a steam saute or just a saute of vegetables, maybe not using any oil at all, that water will actually stay within the pan a little bit better instead of evaporating out of the pan, that moisture will give more moisture to your vegetables. So, um, I'm a huge advocate of having lids for saute pans. Um, and it's a great idea just to have one, um, for different uses. You'll also find sometimes, like if you've actually cooked something, um, and you don't want it to brown more by putting that, um, you know, in the oven, having a lid will help it from browning on the top as well too.
