How does the method for foil bag differ from roasting without oil in a pan in the oven?

Answer:

So what's happening is when you're, um, putting your vegetables into a foil bag, essentially it's trapping all the moisture on the inside of that bag that you've made out of the foil. So it's, um, making sure that all of your vegetables stay moist and all of that, um, all those vegetables are going to be very tender when getting into them as well too. Um, so, um, uh, it's, it's a great way to be able to, to cook. I actually do it all kinds of different ways too. I'll use one of those foil bags even on a campfire when I'm camping to be able to cook vegetables as well too. Um, so that is a pretty different, um, method than roasting without oil in a pan because what you're doing on fat is you're actually getting root of a lot of the moisture. You're looking for that deep caramelization, that kind of brownness that happens, um, on the top of the vegetables to be able to create that my artifact. And, um, that's, uh, can happen in a bag, but it definitely takes a little bit longer and it keeps that, um, moisture basically in there as well.
