Question:

Can you please confirm if I am on track thinking that tapioca starch is the same as tapioca flour? The different product is called cassava flour when the whole root is used?

Answer:
Yes, you're completely right. Tapioca starch and tapioca flour are the same thing. They're both derived from the cassava root as well. Um, they're basically dried down and turned into a flower. Now the flower is usually really, really fine. The starch might be a little bit thicker, but it's, it's pretty, you know, indistinguishable for most cooks, um, to be able to use them back and forth. So, um, they are the exact same thing. Um, and they work great for thickeners and like the, you know, like tapioca pudding kind of consistency. So you are not confused. You're totally right on that. Um, depending on where you are in the world, they might call them something a little bit different, but in the states, they typically call them flower and starch.
