Question:
Can you share with us what type/brand of tray you use to roast vegetables? Mine warps at high temperatures - looking for recommendations.

Answer:
There are a few solid brands, uh, that you would also find, you know, in commercial kitchens. And lemme actually, let me step up here and just provide some context. In commercial kitchens, you find flimsy things sometimes too, and it just depends on, you know, the, the budget at the time of, of opening the establishment. Um, uh, yeah, I've, I've worked in a lot of kitchens and, um, I've come across in places that have some, some, some warped pans as well. But, um, you know, for, for sheet pans, um, if you aim for something that's around 13 gauge, these will be aluminum pans. They're stainless steel pans as well, and, and those are fine. They work great. Um, most of my experiences with aluminum and 13 gauge is relatively, uh, it's, it's pretty heavy, and I haven't, uh, I've never seen a warped 13 gauge pan as you start to get thinner. Um, you know, certainly up, up upwards around 18 gauge when I say upwards, right? Yes, the number gets bigger, the metal gets thinner. Um, so, um, you know, 18 gauge is thinner metal, right? 13 gauges thicker metal. Um, as you start to get into these thinner gauges, then at those higher temperatures, like in the mid four hundreds or above 500 degrees, then you can start to experience, uh, some of that warping. Um, let's see, you know, take a look at some information online, uh, just to see what, um, the broader options are. But one company is Vora that comes to mind, V-O-L-L-R-A-T-H. Um, they're an American company based in the, in the Midwest. Um, uh, somewhere, um, pardon me, I just don't remember the, the, which state it is. But, um, they're, they're used a lot in commercial kitchens. I think I've got, um, some half sheet pans, uh, in the kitchen from Volrath, but there are other companies too, uh, that make some good quality, you know, heavy gauge, um, sheet pans, um, check out, um, uh, there's a website, I think it's, um, restaurants.com or something like that, that sells a bunch of restaurant equipment, um, including small wares, you know, like, uh, like sheet pans. And you can at the very least, take a look at the different specifications and start to learn about the different products out there so that as you read more broadly, you understand, uh, what people are dealing with, what they're talking about, and what, um, you know, what might be best for your setting. Okay. Um, you know, I hope that's helpful and, um, uh, yeah, take, take some time, you know, to, to select those best items because although they will cost more, they will last the rest of your life. And, uh, so I think it's a fair investment. Have fun.
