Question:

I’m allergic to soy and several recipes call for tofu, etc. what can I use to substitute?

— Bill Schrier

Answer:

That completely depends on the recipe that you are using the tofu in. So if you're using tofu in something like a, uh, I don't know, like a cream sauce, like if you're blending it up like a silken tofu or in, uh, even like a dressing, I might, you know, consider using a soaked cashew to make a cashew cream instead or something like that. If you're doing something like a tofu steak, um, you know, I might suggest doing something like either a, uh, a seitan or maybe just like a wheat loaf basically. Um, or even doing something like a jackfruit or something along those lines. But it really kind of depends on the use case for what you're trying to substitute for.
