Question:

I make a plant based vanilla pudding and adding the vanilla extract turns the pudding to an ugly grey color. Any ideas how to prevent this from happening?

Answer:

Well, that's kind of yucky. Um, I'm curious, Kathy, if you're using a vegan sugar because vegan sugar, vegan cane sugar contains a bit of the molasses, not much, but some that's inherent in the cane. So you don't always get a pure white or vanilla color. Um, you can try using artificial vanilla or vanilla in it's called, which is clear and see if that will make a difference.
