Question:
Can I replace date sugar (powder) for sugar in recipes and also date syrup for maple syrup in recipes?
— Sue Baker
Answer:
So I have here some date sugar. You see, I keep food grade silica packs in things like these sugars because they're humectant. This is a very, very finely ground date sugar. Many of them are not, um, smells like dates. I love dates and I love dates. Syrup, which is also called CI salon. Um, it has a very different flavor profile from maple syrup. So, and so you might be able to do that. Um, to me, date syrup is like a molasses substitute. So if the maple syrup is already in the recipe, you can try to use some date syrup. Date sugar, in my opinion, does not dissolve in cakes correctly. And if it's sprinkled on the top of a cake, it burns. So if I were you, I would just give it a test, find a recipe, cut it by a quarter, see what happens, and let me know.
