Question:
When a recipe calls for example 2 cups of flour and then it says to sift, do you remeasure the flour after it’s sifted?

Answer:
Generally a recipe will say two cups of flour and sift the flour. If it's two cups of sifted flour, it's measured after. But I use a digital scale and that is what I would ask everyone to do. It will make your baking a lot more precise. So Annamarie, the recipe should be very specific. The digitally, the weight of the flour won't change when after it's sifted. What will change is the quantity. So if you had two cups of flour sift and it has been sifted and you remeasure it, it's gonna be maybe two and a half cups of flour. So go by the weight.
