Which egg replacer would you prefer for "pâte a choux" and the cooking method?

Answer:
I have never seen a vegan pata shoe. Patsu is rest is a base. Um, and I made it and I didn't care for it at all. But a typical Pata shoe, you make a pade and it calls for four eggs. So there really isn't anything. And I actually did some research. I looked at the pastry chefs who would do things like that. Carolina Malia from TI and Bakery for example, does a lot of ery and um, beautiful qua and things like that. And also Tony Rodriguez, this book. But the fact is that nobody's doing that. Nobody's doing that. If you are able to develop one, I want to know about that.
