Would you recommend using steel oats blended down to flour when making zucchini bread? If so what brand of baking powder and baking soda would you recommend?

So this your question, I'm going into my drawer here because I wanna get something to show you is really has a couple of, there are a couple of parts to your question, Eugene, and that is, I do, when you're talking about blending steel cut oats down to flour, you're talking about making oat flour. Okay, so here is some oat flour that I have in my fridge that I made some time ago, labeled and dated. You definitely wanna get yourself some tape and a pen and write what it is, how much it is and the date you wanna keep your oat flour in the refrigerator or freezer because it will become rancid. So here are steel cut oats and here are rolled oats. I have actually not made oat flour from steel cut oats, but you could in a strong blender like a Vitamix. Now I believe what you're saying, since you're asking what brand of baking pattern baking soda, what I recommend, so this is the baking powder that I use, it's aluminum free, it's rumford, it's aluminum free and this is the baking soda that I use. It's Bob's red Milk. However, I think what you're asking is, and Eugene, you can write in, you can, you can follow up if I'm on the wrong track here, but it sounds to me like you are asking if oat flour, however it is that you obtain your oat flour, can be used to make zucchini bread. I rarely use 100% oat flour in baking there. It's a gluten-free flour, it can be crumbly. I have a wonderful oat muffin that I love and my grandkids kids love it. They call it grandma's power muffins actually, but it, there is a portion of whole wheat pastry flour in it as well. If you have been making, if you have been making quick breads or muffins with oat flour, then you know what you're, you know, you can tell me how it's working out. But generally speaking you need extra baking powder and some baking soda as well. So if your recipe would typically take one teaspoon of baking powder, you may need two, two and a half teaspoons.
