Is there a difference between almond meal and almond flour?

Answer:
And that is a great question actually, that came up just this week with somebody I was working with. Almond meal tends to mean whole almonds. And by whole almonds what I mean is the almonds with the brown skin on them. And you always want to slow roast your nuts to bring out the flavor. And so when the almonds, the whole skin on almonds are ground even, finally we call that almond meal. Almond flour is used to describe the almond meal you get from blanched almonds and it is finer. And so you can buy almonds that are blanche, that's almonds without whole almonds, without the skins on them, or you can blanch them yourself. Sometimes when I have a little extra time, I'll just put up a pot of boiling water, put the whole almonds in for a very short time, pop 'em out, and then just sit there and go like this and get them, get the skins off them.
