I heard you can make chickpea flour by high blending dried chickpeas - have you done this and/or used this flour in desserts?

Answer:

I haven't done that. I have purchased chickpea flour from Bob's Red Mill. I keep it in the freezer. I really like it. I add a little bit sometimes to a dessert recipe. And I think, I think, you know, there's so much you can do with chickpea flour. I love sacca and you can try doing that. Sweet. So let me know about, I mean I have heard that as well, that you can blend dried chickpeas. So I would wash them, pick them over, just same as if you were going to be cooking them and then get them nice and dry and then a little at a time in a Vitamix and see how that works. I have actually, Diane, that's not the full story. I made some chickpea flour, um, but it wasn't very, it wasn't fine enough for me and I used it to use as a flour in a dessert. So I used it in combination with whole wheat pastry flour and AP flour to do some breading, I think for tofu.
