Question:
I made aquafaba whipped cream for thanksgiving, and the next day separated and was mostly liquid, is there any way to preserve it so it can last a couple of days?

Answer:
There isn't Robin. Aquafaba will hold up when it's whipped properly with some cream of tartar and to stiff peaks it will hold up for a couple of hours. Or in the case if you're using it to make baked Alaska and those are in the freezer, then it's going to hold up. But no aquafaba is something that you really do and serve within a couple of hours. Sometimes you, if, if you've got it sitting around or in your refrigerator for a couple of hours and it starts to leak liquid, you oftentimes you can re whipp it.
