Question:
Why is corn syrup is used in commercial pecan pie? I was told corn syrup is not good for your health.

Answer:
No, corn syrup is definitely not good for your health at all. Um, it's super sweet and that is why it's used and it has some keeping properties, you know, it helps, it helps bake goods hold and it's very, very sweet. I replace corn syrup with, well agave to me is the sweetest of the vegan approved liquid sweeteners. Now it's very sweet. I use it very little as a matter of fact. But there are times that I use a little bit, you want to make sure that you are buying pure agave syrup. Some are, you know, p manufacturers are looking to make some money maybe where they shouldn't or cut corners. So I use agave for example, along with maple syrup and rice syrup to make my vegan honey thing is that it's important to understand the properties, the different properties of our vegan sweeteners. We have granulated sweeteners, we have organic cane sugar, which is the closest to white sugar, which we don't use. It retains a little bit of the molasses. The crystal is larger than a white sugar crystal. So I rough it up in the food processor and store it that way. We have a product called whole cane sugar, which is also, you will see that as dehydrated cane sugar. That is the same, it's cane sugar, but all of the molasses that's inherent in the cane is contained in this sugar, in this granulated sugar. You may have seen the brand Su sugar cane Natural is what it stands for, has a very heavy molasses taste and it's very coarse. So I grind that more. And then coconut sugar, which is a sugar that a lot of people I know prefer to use, use that instead of brown sugar and supposedly digest a bit slowly, a bit slower than cane sugar that has a, it doesn't taste like coconut, but the different brands have different flavors. So that's another one that you can use in terms of replacing corn syrup. A combination of maple, agave and rice syrup will do that. And they are all different. They have different sweetness levels. Rice syrup has the lowest sweetness level. I love it. I think it tastes like caramel maple syrup. You want to use Grade A dark used to be grade B, but now it's grade a dark and a little bit of agave. Cook them together, they get sticky and can easily replace the corn syrup. So I hope that that helps. Um, again, it is in the commercial pecan pies because it's a very inexpensive sweetener.
