What is the best oil substitute and why?

So I went over this a little bit to mustard can add both picon c a little spice to it. But also a creaminess to thing to two sauces and vinaigrettes pureed avocados Yogurt Lab now. things like that are really great substitutes cheers here also fruit purees can be a very good substitute as well in that they add body and texture and help to sort of carry flavors through all right.
