Question:

What is the differrence between regular sugar cane and Okinawa black sugar cane?

— Jeannie(Myong) Lee

Answer:

It's very dark. It's very mineralized. It's only grown in a few areas in Japan. So you really get the terroir. It's relatively on refined and it's just lovely. If you were swapping out regular cane sugar. to the Okinawan you're going to have a difference in flavor. That's for sure. But other than that, I'm looking forward to making some puddings and and making some special desserts with it. I don't think it's a one-to-one swap, because of the flavor.
