What is the best flour for pan de muerto, all purpose or bread flour?

Answer:

I think I can answer that but I'll let you all purpose all purpose is is a good one. We use King Arthur flour for that bread flour might work, but you got to be careful with the gluten the gluten amount, but for this recipe, I used all purpose. Yeah, I typically use bread flour for my sourdough or I want the structure of a bread. But if I'm doing a light a light thing like, you know pound cake I'm gonna go with the pastry flour or brioche with all purpose flour. So you don't build up that tough structure.
