Question:

What happens when caramel crystallizes when you are making it? How can you fix it if it does?

Answer:

The only way caramel can crystallize if it's just water and water and sugar or just the Sugar by itself. And you stir it too much and then it just recrystallizes. But if Carmel if a Carmel mixture crystallizes, all you have to do is put it back on the stove and it will melt again, you know, you don't have to worry about that.
