Question:
I heard aquafaba can be used in recipes as egg whites. Is this true? If so, is it 'any' bean aquafaba or just certain ones? How long will it last in fridge? Can it be frozen?

Answer:
I will save black bean aquafaba. If I am making a chocolate dessert simply because it's not going to change the color. It might enhance the chocolate even more but for the most part using garbanzo bean or cannellini white navy bean would be the preferred beans to use and What you do want to do is? After you drain the aquafaba you can put it into little ice cube trays much like these. And put them in one ounce increments so that when you get to use them you pop them out and they will fall quickly and evenly and then you can go into making your aquafaba. Hopefully you have a good stand mixer or good egg beater or whatever that will be very helpful when I work with children. They don't enjoy making aquafaba unless I have my fancy stand up mixer because it gets done in seconds. So to speak how long will it last in the fridge? I would put it in the freezer and remember that most Frozen things can stay in the freezer from three to five months remember to label and date it when you put it in the freezer.
