Question:
How should I clean and store mushrooms? I heard you shouldn't rinse under water because they soak the water up like a sponge. Should I just wipe off with damp towel? Also, what is the best way to store them in fridge and how long do they keep?

Answer:
I spent a day at a mushroom farm a couple of months ago and ask questions exactly like that Luann. So the thing of it is is that some people will go out and buy a mushroom brush, which is not necessary, but you can use a dry cloth like a Turkish towel cloth just to gently dust off any debris or little particles of dirt that might be there. I want to build up my microbiome. So eating a little bit of dirt, you know, probably isn't all that horrible the best way to store them. Okay, if You buy your mushrooms in one of those cellophane wrap containers where you see maybe three portobello mushrooms together or sliced mushrooms. I advise to not buy the sliced mushrooms because they oxidize quickly and they're not as fresh a product as when you might want to do that mushroom assignment where you want to have the freshest mushrooms that you can have. So you want to store them in a brown paper bag and You can either use a brown paper bag or you can use a food storage linen bag, but do not store them in plastic because they will get slimy overnight. How long will they keep? Well, remember that you have a crisper in your refrigerator whose temperature is lower or you can keep them in the rear of your refrigerator where you have the most constant temperature for keeping things cooled. How long will they keep? I never have mushrooms less that long because I eat them practically every day. So when they start to get slimy or brown slimy to the touch I would eat them in that exact moment, but if they have and untoward Odor to them I would not eat them. I hope that helps.
