Question:

What are some of your favorite combinations of whole grains + beans + veggies + spices/herbs?

— Donna Meyer

Answer:

This is sort of an interesting question Donna when I went 12 years ago to the inaugural Engine 2 immersion in Austin, Texas. I had the extreme pleasure of meeting Jeff Novick who over the years has become a very good friend. And as you may know Jeff is a registered dietitian who works with the McDougal program and he just sort of has his ear to the ground and the one thing that I learned from him was this That you have one basic recipe. So let's say that I'm going to use sweet potatoes oatmeal flaxseed meal I'm going to put it all together and I'm going to divide it in three and one is going to be Italian. And then the other one is going to be Mexican and the other one will be Indian. This is what I learned from Jeff and this is how I have cooked for the last 12 years when I make a big pot of soup that has your aromatic vegetables in it and it's a beautiful color much like the simple cabbage soup recipe. You can divide that recipe into threes and you can add. Garbanzo beans and more Tomatoes or you can add Curry to it or whatever. So think globally in flavors and what you like, I do have a recipe that I'm very fond of it's in the engine to cookbook. It's called the yo Adrian Burger because I live in Philadelphia and that has lots of oats and quinoa and it because I I'm always very cognizant of trying to get in as much protein as we can get from eating a plant-based diet. And as you know, quinoa contains all of the nine essential amino acids making it a perfect protein food. So I hope that you know, just get creative with it and have fun my favorite beans to use by the way are white beans just because they mash up easily and they hold well, To whatever it is that you're making and don't forget a binding agent either Chia sees or flaxseed meal or whatever. Hope that's helpful to you. I want to see your Burgers when you're done.
