Question:

I have a question about woks. Time to get a new one. Am looking at 14" carbon steel but trying to decide round or flat bottom, for max. heat on gas stove. I have a wok support. Any thought?

Answer:

Yeah, so I actually have both of these kinds and I have to say that I really like the round bottom more. and You know quite honestly though. It's probably a little bit about what style you're using. Now the reason that they started putting flat bottoms on them. It's because most people don't have a support for the bottom. So if you have a support for the bottom, I would definitely say go for the round bottom. The flat supports are basically because a lot of people on stoves don't have them and especially if you have an electric stove, you know flat bottom for it to be able to sit because the rounded bottom won't sit on a flat stove. So if you have a walk support, I would highly recommend going for the round support of the bottom just for even you know heat on the bottom. It's gonna work much better than the flat one the flat one. It's just the only thing they're doing is extending down. That Arch just a little bit. So when you look typically in the top of the pan you're going to see that it's still arched in the same way. It's not flat on the bottom. But if you flip it upside down you'll see the bottom is flat and that's typically to be able to sit either on electric stove or on a stove that doesn't have that walk support like you're talking about. So if it were my money, I definitely go for the rounded bottom and I hope that helps out.
