In the same way that there is no one size fits all with egg replacer. There's no one right? flour to use to make something gluten-free. It depends what it is that you're doing. That you're making but there are many flours that are. Naturally gluten-free Beyond coconut or almond sorghum is a wonderful gluten-free flour. It's sweet. Also sorghum is a cereal grass. I love using sorghum syrup as a molasses replacement and don't forget about oat flour. It's absolutely delicious oat flour makes a wonderful gluten-free. I find that a mix of gluten-free flours instead of just using one is the way to go and if what you want to do is replicate a wheat-based cake My recommendation is to use Bob's Red Mill one to one. All Purpose gluten-free baking flour. There you go, and it's completed has some xantham gum in it.
