Question:

Can I make my lime or lemon curd without egg? And the same for pfefferneuse?

— Hilda P J

Answer:

I make a lemon curd fat simile and I'm saying Flex simile because vegan desserts are not going to be exactly the same in some instances. Cakes. Yes, many of them are going to be exactly the same puddings many of them are going to be exactly the same but not everything. So I do a lemon curd. Facsimile two different ways one is starting with a cashew cream specifically the Vanilla Pastry cream that's in the course and adding lemon juice and lemon zest. To it. I like that and then a nice tasting vegan butter and a simpler one less calorie dense is to do a lemon what we would call a lemon Canton and this is something that I was doing for years. Well before I knew about cashew cream. as it dessert sauce, and that is to make a an agar-based gel agar is vegetable gelatin seaweed derived gelatin that has been used for Millennia in Asian Cuisine and I do it with apple juice with lemon juice with lemon zest and a pinch of I used to use turmeric powder to make it yellow. Now. I use Suncor Foods in terms of the cookie. If I remember right that cookie has eggs and a lot of spice. It shouldn't be a problem for you to play with an egg replacer because there's not a lot of egg in that cookie so go for it and let us know Hilda.
