Question:

What is the ganache recipe?

— Vivian Spangehl

Answer:

Ganache is typically an Emulsion of a particular percentage of chocolate. and in this case plant milk in a typical ganache a non-vegan ganache is chocolate. And heavy cream for example, and sometimes other recipe, you know other things are added maybe butter or flavorings and so on. And it's an Emulsion. So it's easy to do but you have to be careful when you're doing it. In other words, you use the chocolate that tastes good to you right out of the package, but you need to use a chocolate percentage that is listed in the recipe and the percentage of chocolate and the percentage of liquid used is going to depend on your final results. So Vivian that particular recipe that I made is in the course and it's in my cookbook. A lot of ganaches are one to one the same amount of chocolate the same amount of milk. I use less milk. And I'm saying milk, but I think you know, I mean plant milk. I use less milk if I'm doing a glaze. I mean if I'm doing a truffle Center then I do if I'm making a ganache.
