Question:

I am trying to make a high protein GF bread. I have found a recipe with lentils instead of flour but it really isn’t very tasty or attractive. I am considering adding a little oat flour to give it rise and flavor. Or do you have any others tips?

Answer:

Well Kathy, I'm a basic rustic Baker and I have cooked with lentil and it is very heavy just like garbanzo bean flower is also very heavy. So I guess I'm curious to know why you want a high protein gluten-free bread. That would be curious to me. I think it's going to take experimentation on your part but lentil flower is very very dense if you're going to add oat flour to it. So here's something interesting. I make my own oat flour in the Vitamix just because it's easy. You don't want to over mix it because then you get sort of like just a very heavy not good looking flower, but I'll use their name Quaker Oats is making oat flour and I did try it and I didn't like it at all because it was much too silky and much too thin and they gave you conversions on the back, which I did try to follow. So I think this is gonna be experimentation for you. And you know, maybe you can make the bread to the best that you like it and then fill it with delicious vegetables and maybe a wonderful veggie burger and get your protein from that but it sounds to me like you might have to do some experimenting in the kitchen. I would suggest going to the Bob's Red Mill gluten free section on his website and see if there are any tips that they can offer to you. By the way, check out Bob's New Year's video on Instagram.
